Pesto Dressing

Making your own condiments is a fantastic way of adding flavour and nutritional value without any nasty ingredients (as are found in many store bought varieties).

Having a jar of this dressing on hand throughout the week is a great idea; you’ll be ready to give fresh or steamed veggies a lift! It’s also delicious drizzled over poached eggs.

Ingredients

  • 70g freshly picked basil leaves
  • ½ teaspoon fine sea salt 
  • ¼ cup pine nuts
  • ¼ cup grated Pecorino or Parmesan cheese
  • 1/3 cup extra virgin olive oil
  • ¼ cup natural yoghurt (sheep’s or cow’s milk)    

Method

Place all ingredients in a mini food processor and process until smooth.
Store in a glass jar in the fridge for up to 4 days.
