Mango Coconut Truffles
- 1 cup almond meal
- 1 cup shredded coconut
- 3 scoops Mango Smoothie Wheyless
- 1½ tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- Desiccated coconut for rolling
- For extra sweetness, add 2-4 teaspoons of pure maple syrup.
- Blitz shredded coconut and almond meal in a food processor until they are starting to form a paste.
- Add all other ingredients and blend until well combined.
- Roll teaspoonfuls of mixture into balls
- Roll into desiccated coconut, if desired
- Store in fridge or freezer
