Quick Spanish Omelette
- 1 cup vegetables (onions, asparagus, capsicum, tomato, spinach, parsley, chives, etc), finely chopped
- 1 whole egg
- 2 egg whites
- 1 tablespoon water
- Pinch of cayenne powder
- Heat up a non-stick frypan.
- Lightly stir-fry vegetables, then remove from pan.
- Whisk egg with egg whites, water and cayenne powder.
- Pour into pan and cook lightly.
- When almost cooked, top with vegetables and flip to heat through.
